The Food Think Tank collective is several dozen people – chefs, confectioners, scientists, students, artists, craftsmen, ceramics makers, glassmakers, designers, musicians, film makers, performers, mixologists, baristas, farmers, copywriters, IT guys, and electricians. They may come from different walks of life but they do have something in common: the rule-breaking attitude, the innovation, and the love of one-of-a-kind food. Their motto is ‘The more you give, the more you get’. With that in mind, they carry out unusual culinary projects which often combine art, contemporary design, and new approaches to TASTE. Too big to fit the well-known forms of cuisine, Food Think Tank create their own culinary genre called ‘The Root’. It’s all about bringing back the things that have been with us from time immemorial but which, at some point, slid into obscurity and got lost in the mediocrity and the haste of the modern lifestyle. They develop the old forms with some innovative ways of preparing food to appeal to all the senses, without focusing solely on taste. The members of the collective enjoy learning and passing the knowledge to others, creating a cuisine and a new approach to cooking, starting from the roots.
